Mango Avocado Salsa
I absolutely LOVE both mangoes and avocados, I mean, who doesn't? Actually, I tend to meet a lot of people who say they don't like mangoes and I just don't understand. Really, what's not to like? I guess cutting mangoes is never too much fun because they're pretty messy and I always fight with them to get every last bit off of the seed and skin, but that's about it. Yep, that's pretty much all I got in the I-don't-like-mangoes department...
So, anyways, back to mangoes and avocados... When you put the two of them together, it’s like a party in my mouth!
And this recipe is especially exciting for me because both the mango and avocado that I used for this came from my parents’ trees in the front yard of their home. So for me, this recipe was homemade with love from homegrown ingredients. Double win.
The great thing about this savory and sweet salsa is that, aside from being absolutely delicious, it’s extremely versatile. You can eat it alone as a salad, put it on top of a salad, use it as dip for chips, spoon some over tacos, or put it on toast. The possibilities are endless. I like to get a little crazy with it and put it on top of avocado toast. The more avocado the better, right? I like to take a piece of toast, spread some creamy Haas avocado on top and then spoon this salsa on top of that. Breakfast of Champs!

Ingredients:
- 1 large mango, cut into cubes
- 1 Florida or 2 Haas Avocados, cut into cubes
- Juice of half a lime
- 2 scallions, thinly sliced
- 1 tablespoon freshly chopped parsley
- 1 tablespoon freshly chopped cilantro
Directions:
- Combine all ingredients in a mixing bowl and mix together until everything is combined.
- Grab a spoon and enjoy!
Toddler Tip:
Let your toddler scoop the mango and avocado out of their skins and if they're curious about either one, give them a taste!
