Well, we’re officially in that wonderful period between Halloween and Thanksgiving…  You know, that time between overloading on sweets and treats and, oh wait, more overloading on sweets and treats. 

Halloween was great this year, as it always is.  This was Zoey’s third Halloween, but the first Halloween that she actually really trick or treated.  Her first Halloween she was too young to trick or treat…  She just crawled around the house as a little strawberry (so cute).   Last year she dressed up as Minnie Mouse (I know, go figure, right?) and we tried the whole trick or treating thing, but we only made it to maybe two houses.  Who knew convincing an almost two year old to go up to a door to get candy could be so tough??  So this year was extra special because it was really like her first officially official Halloween.  

This year Zoey was going to dress up as Princess Anna from Frozen.  She had the dress, the shoes, the tiara, and she's even got the red hair.  So just before her cousins came over and we all went trick or treating, I got her all dressed up as Anna.  She came out into the living room twirling around in excitement and then not even ten seconds later had a meltdown and made me take it all off.  She went into her closest, called me in there, and told me she wanted to be a "little bit princess" and wear a Flamenco dress that her grandparents brought her from a trip to Spain a few months ago.  And that was that.  Her cousins dressed up as a firefighter and a minion.  The three of them were just the cutest little bunch I've ever seen!  And they had such a great time trick or treating together.   

So with Halloween just behind us and Thanksgiving right around the corner, what better way to take a break from all of that sweet tooth overloading than to start off a morning, or two, with a little taste of the holidays in a healthy Pumpkin Pecan Pie Green Smoothie Bowl?  Sounds pretty good, right?  Pumpkins, Pecans and Kale, oh my!  Ok so maybe at first it might sound like it’ll strike the palette as a bit odd, but I can assure you these flavors together did not disappoint.  This Pumpkin Pecan Pie Green Smoothie Bowl is deliciously healthy and will do just the trick to hold you over until the real thing hits your table at the end of the month.

Ingredients:

  • 2 frozen bananas
  • 3 tablespoons pumpkin puree
  •  2 large handfuls of baby kale
  • 1 tablespoon hemp hearts
  • 1 tablespoon chia seeds
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup of almond milk, unflavored and unsweetened
  • ½ cup of ice
  • ¼ cup of pecans
  • Additional chia seeds, optional
  • Banana slices, optional

Directions:

  1. Blend all ingredients except pecans, additional chia seeds and banana slices in a blender until smooth and creamy.  Transfer smoothie to a bowl and top with pecans, additional chia seeds, and banana slices.  Serve and enjoy!

Let your toddler decorate his or her own smoothie bowl!
