I’m Jackie, a stay at home vegan mommy of one amazing little girl. My daughter, Zoey, is three years old, a huge Disney aficionado and Minnie Mouse super fan. She’s also the most amazing little helper in the kitchen that a mother could ask for, and so she is… my Minnie Chef.

MANGOing Crazy for this Smoothie

Mangoes are definitely one of my favorite summer fruits, if not my favorite.  South Florida is definitely the perfect place to live to feed my mango addiction.  There are mango trees everywhere—so many neighbors and friends have them in their backyards, and they bear so much fruit that no one ever knows what to do with it all.  Every year it's the same thing… People with bags full of ripe mangoes who can't use them before they go bad and whose freezers are too full to store even one more.  So they just hand them out, by the bag full, to neighbors walking by their houses.  And I am always more than happy to take mangoes off their hands!  

Aside from their amazingly sweet and tropical flavor, I love that mangoes are just so versatile.  They make for great accompaniments to both sweet and savory dishes.  From smoothies to sauces and salsas to chutneys, there is just so much to do with mangoes!  

Of course, one of the most obvious uses, in my opinion, for mangoes is smoothies.  And this smoothie is soooooo good! If you like mangoes, you’ll go crazy for it.  The mango and banana give this smoothie an insanely creamy texture, and the flavor is out of this world! 

Serves 2

Ingredients

  • 1 mango 
  • 1 ½ cups frozen strawberries 
  • 1 banana
  • 1 cup frozen pineapple
  • 3 ounces of water

Directions: Place all ingredients in a blender and blend until smooth.
