peanut butter cookie dough bites
Cookie Dough by the spoonful--come on, we've all been there. It makes for a perfectly acceptable snack, doesn't it? Well, maybe not always, but it definitely can! These peanut butter cookie dough bites are raw, vegan, gluten-free, and packed with protein! They make an awesome pre or post-workout 🏋snack, are the perfect toppings for oatmeal, ice-cream and smoothie bowls, and are totally decadent and delicious.
I'm always looking for new ideas to switch up my midday snacks and I love having healthy options on hand. I always have an arsenal of nuts, seeds, fresh fruit, dried fruits, etc. stocked up, but sometimes those things just won't do the trick.
Lately I've been getting serious about going to the gym and putting on some muscle 💪 so I've been using things like PB Fit powder and Almond Pro almond flour and adding the PB Fit to my protein shakes, smoothies and oatmeal and replacing regular flour with high protein almond flour in recipes for that little extra boost of protein.
I've made a bunch of raw desserts with almond flour and dates as the base for the crust and love the chewy, cookie dough-like consistency it has. And since my tub of PB Fit sits right next to my blender, the last time I was making some raw dough, I got inspired and decided to throw in some PB powder because, let's be real, peanut butter makes everything, and anything, better, right???
These peanut butter cookie dough bites are healthy--made from just 3 simple ingredients (fruit and nuts)--and so indulgent that you wouldn't even know it! It's always a bonus when a healthy, protein-packed snack doubles as a dessert or special treat for the little ones!

Ingredients:
- 1/4 cup PB Fit powder
- 1/4 Almond Pro almond flour
- 11 pitted Medjool dates
Directions:
- Place all ingredients in a strong blender or food processor and blend on high until mixture becomes dough-like.
- Using a teaspoonful of dough at a time, form balls by rolling dough between the palms of your hands.
- Store in the refrigerator in an a airtight container.
Toddler Tip:
These make the perfect afternoon snack for little ones and would be a great addition to a lunchbox!
